{"id":197,"date":"2014-08-20T01:38:16","date_gmt":"2014-08-20T01:38:16","guid":{"rendered":"http:\/\/tellingthetruth.info\/recipearls\/?page_id=197"},"modified":"2014-10-09T18:12:44","modified_gmt":"2014-10-09T18:12:44","slug":"cranberries","status":"publish","type":"page","link":"https:\/\/tellingthetruth.info\/recipearls\/fruits-fresh\/cranberries\/","title":{"rendered":"~ Cranberries"},"content":{"rendered":"<p><strong>Fresh Cranberries are at their peak harvest season October thru December.<br \/>\n<\/strong><\/p>\n<p><strong>HOW TO PICK FRESH CRANBERRIES: <\/strong><\/p>\n<p>Before cooking, sort out any soft berries and stems and rinse in cold water.<br \/>\nChop fresh berries in small batches in blender or food processor, using short pulses or berries will turn into paste.<br \/>\nIf using frozen berries, don&#8217;t thaw them before cooking.<br \/>\nSort and rinse, then use just like you would fresh berries.<br \/>\nCan be frozen in original bags for up to a year.<br \/>\n12 oz. bag = 3 cups whole berries.<\/p>\n<hr \/>\n<p><strong>CRANBERRY RELISH\u00a0\u00a0 \u00a0\u00a0\u00a0 (Dot Berry)\u00a0 CHESS LOVES!!<\/strong><br \/>\nMakes 2 cups<\/p>\n<p>16 oz. can whole-berry cranberry sauce<br \/>\n1\/2 cup orange marmalade<br \/>\n1\/2 lemon (juice and grated rind of)<br \/>\n1\/4 cup chopped pecans<\/p>\n<p>Combine. Chill until ready to serve<\/p>\n<hr \/>\n<p><strong>CRANBERRY PUDDING (or Blueberry)\u00a0\u00a0 \u00a0(Mom 12\/07)<\/strong><\/p>\n<p>1 c sugar<br \/>\n2 c flour<br \/>\n2 t baking powder<br \/>\n\u00bd t salt<br \/>\nMix together, then add:<br \/>\n1 cup milk<br \/>\n3T melted butter<br \/>\n2 cups whole fresh cranberries<\/p>\n<p>Bake in 9 x 13 pan at 350\u00b0 for about 1 hour.<\/p>\n<p><strong>Serve with: HOT BUTTER SAUCE<\/strong><br \/>\n1 c butter<br \/>\n2 c white sugar<br \/>\n2 T brown sugar<br \/>\n1-1\/2 c cream or evaporated milk<br \/>\nMix together and bring to boil; simmer on low 10 min til thick.<\/p>\n<hr \/>\n<p><strong>MOLDED CRANBERRY SALAD\u00a0\u00a0 (Lisa Moran 11\/2012)<\/strong><br \/>\n(Makes a 6-cup mold)<\/p>\n<p>Mix together and let stand:<br \/>\n1 c. ground cranberries<br \/>\n1 c. ground apples (not pared)<br \/>\n1 c sugar<\/p>\n<p>Combine:<br \/>\n3 oz. pkg. lemon jello, dissolved in 3\/4 c. boiling water<br \/>\n1\/4 c. chopped pecans<br \/>\n1 3\/4 c. orange juice<br \/>\n1 c. crushed pineapple, well drained (measure\u00a0 juice and use it as part of the boiling liquid)<\/p>\n<p>Add the jello mixture to the apple-cranberry mixture.<br \/>\nPour into mold and refrigerate until set.<\/p>\n<hr \/>\n<p><strong>SO EASY CRANBERRY CREAM SALAD\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 (Edy Reese)\u00a0 <\/strong><\/p>\n<p>8 oz. whipping cream<br \/>\n3 oz. cream cheese \u2013 softened to room temperature<br \/>\n\u00bc c sugar<br \/>\n1 capful lemon juice<br \/>\n10-1\/2 oz can whole berry cranberry sauce<br \/>\n\u00bd c chopped almonds or pecans<\/p>\n<p>Whip until smooth: whipping cream, cream cheese.<br \/>\nAdd sugar and lemon juice \u2013 mix well.<br \/>\nAdd cranberry sauce and nuts \u2013 mix well.<br \/>\nFreeze either in a mold or festive bowl. If molded, use normal methods of removing to dish (float in warm water until loose is usually best). OR, if served in a bowl, let it stand about 15 to 20 minutes before serving. I like the bowl best because when this dish thaws it runs.
